Del 1. Verktyg och förbereda ugnen

Del 2. Deg

735 gram vanligt mjöl + 735 gram 00 mjöl = 1470 gram mjöl

1000 gram vatten 1kg

30 gram sea-salt


15 gram jäst
eller
7,5 gram torrjäst
eller
* 6 gram snabbjäst

BLANDA
Mjölen
Salt
Jästen

Häll i vattnet i en fördjupning i blandningen

Blanda till den är degig

Häll ut degen o jobba med den, inget mer mjöl.

Gör degen minst 8 timmar innan bakning, (ev dagen innan och vila i kylskåpet.)

Låt vila i en bunke ca 4 timmar

Damma bakbordet med mjöl

Dela upp i bitar ca 250 gram o låt vila 3-4 timmarunder duk.


Mjöla bakbord pizza/trä spaden

Jobba med degen till en pizzabotten
